NECTARINE MOCKTAIL

3 fresh California nectarines, halved, pitted and diced
1 container (10 ounces) unsweetened frozen strawberries, partially
thawed
1 bottle (28 ounces) club soda or sugar free ginger ale
8 mint sprigs (optional)

Add nectarines, strawberries and 1 cup club soda to blender.
Process until smooth. Pour into chilled glasses about 2/3 full.
Top with remaining club soda. Garnish with mint, if desired.

Makes 8 servings.
